Overall:
This is quintessential Aymonier flavors. Bold, fresh wormwood, soft fennel, fruity, fresh anise, and a classic recipe of supporting herbs. This absinthe is amazing garden fresh and herbaceous. If the louche on this was a bit denser, this absinthe would be perfect. The louche is gorgeous, but the end result is a bit thin.

Appearance:
Before water - Green yellow peridot
After water - Pistachio, mint green and thick blue edges
Aroma:
Before water - Fruity, floral, wormwood, outdoorsy, and a bit boozy
After water - Subtle, floral, powdery, really draws you in. Great quality wormwood and fennel really pop out at you.
Louche: Builds real slow, immediately turns baby blue in the bottom of the glass and builds from the outside in with blue, teal, seafoam green, peach and honey
Taste:
Wild outdoorsy wormwood, coriander, and mint, then fruity lemon and floral notes. A little peppery later on. The anise and fennel open up mid-palate, and they come in rich and oily. I'm really enjoying the wormwood in this, it comes back toward then end just after the anise and fennel. Nice, evolving, medium mouthfeel.
Finish:
Cool peppermint and lemon, then herbaceous and floral but refreshing
