Prelude

Overall:
I want to see what happens as this gets older. It's very grape spirit forward right now. It tastes good, but I want more botanicals up front.

Aroma:
Very grapey, raisins, some blueberry in the background, a bit floral before any water is added, and can barely detect any alcohol. Reminds me a bit of cognac. Very nice. Raisins, floral, and a little spicy once it's louched. This is a scent I've never found in an absinthe before, but there's a reposado tequila aroma. Alluring, definitely draws you in.
Appearance:
Crystal clear as a blanche should be. Once louched it stays baby blue! If it were all about color, this would be my all time favorite blanche! The color gradient is beautiful, where the light comes through is all blue and opalescent milk on the side the light doesn't penetrate.
Louche:
Perfect! Builds at a medium speed, doesn't cloud too quickly. Blue, green, and pink oil trails. Three dimensional, one might say.
Taste:
Very fruity up front. Feels light on the tip of the tongue and a bit more rounded as you move it around, almost ethereal. Blooms mid palate as the anise and fennel make their entry, powdery and floral. The most interesting note, and one I've never picked up in an absinthe before, there's a reposado tequila note, like silky, aged agave and like peel. Subsequent sips start to reveal a light mintiness. Brandy bubble gum fruitiness throughout.
Finish:
Cool, refreshing, brandy fruitiness. Floral and minty. Lingers nicely.
