Trail of the Cedars

Overall:
Glacier Distilling is very close to Glacier National Park in Montana, and though I haven't been to the park yet, this absinthe tastes like Glacier National Park in a glass (based on pictures I've seen of it). If I did go to the park, I couldn't think of a better way to end a day of hiking than with a glass of this absinthe.

Aroma:
Sweet earthy mint and baking spice without water. Bright, herbaceous, coriander and sweet angelica root. Wild minty wormwood. Sharp, fruity, fresh anise.
Appearance:
Honey peridot. Clouds into a slightly opalescent pastel mint green cloud with a cloudy white cap at the top and red shines through around the edges in good light.
Louche:
This absinthe loves sunlight. Golden red trails shoot through the green spirit and quickly cloud turning baby blue and white.
Taste:
Minty wild wormwood, sweet wild celery angelica rooty earthiness, and coriander out in front, bright and herbaceous. The anise and fennel bind all the flavors together. It's a little citrusy, cool and balmy around the edges. Herbaceous and floral, mint and sweet green earth. The angelica root brings out a conifer note without tasting like pine trees. Delicious, medium mouthfeel.
Finish:
Bright fresh minty wormwood, coriander, and sweet angelica root, but it's sweet fruity anise that lingers. Refreshing.
