Fürst von Absinth

Overall:
Kind of cross between being medicinal and desserty. This absinthe has something for everyone. The trinity is exquisite, it's floral, desserty, and a little medicinal, but everything about it is wonderful.

Aroma:
Very boozy, but like a field of lavender flowers and spice before water. Water opens this up into a lovely, warm, powdery bouquet. Just the right amount of lavender and chamomile. The laurel leaf adds a nice spicy leafy touch. A light lemony rosemary scent, and again, the perfect amount, any more rosemary would be too much. Lastly, a touch of peppermint.
Appearance:
Bright peridot. Creamy mint green, nice blue ring around the edge.
Louche:
Slow at first, and very colorful. White, blue and pink trails swirl into clouds, then quickly thickens up from there.
Taste:
As far as floral absinthes go, I think this is the best balanced absinthe I've had. Lavender, present but not overbearing, soft chamomile, lemony rosemary, sage, mint, all beautifully married together. Peppermint is present, but not overpowering. Then after that wonderful bouquet is anise, minty wormwood, sweet fennel. Really loving the creamy powdered sugary fennel on the back of the tongue.
Finish:
Once you swallow, the taste repeats in reverse order. Anise, wormwood, and peppermint, then the whole bouquet as you exhale.
